Job Summary:
The successful candidate will be responsible for coordinating the day-to-day operation on the ground, overseeing maintenance, caretaking, cleaning, and catering departments. The main duties include managing supervision and control of food and beverage from the kitchen, ensuring high-quality food is provided in all areas while controlling GP% and costings.
Main Responsibilities:
* Ensure that the service of all meals meets the company's standards and clients' specifications
* Obtain supplies and purchases from company-appointed suppliers or site-specific suppliers
* Maintain control of raw materials and portions to the company's standards
* Prepare and present food using fresh and local produce while maintaining a high standard of quality and presentation
* Ensure compliance with health and safety procedures and legislative requirements
* Maintain satisfactory relationships at all levels of the client organisation
* Attend to customer complaints and compliments within guidelines and timeframes
* Conduct regular security checks and ensure tight stock control on all produce
* Design and roll out a recipe database for core items and menus
* Review and update hospitality menus and offer weekly menu planning and engineering
* Attend meetings, conferences, and training courses as requested

Qualifications and Experience:
* Previous experience within a working kitchen
* Knowledge of kitchen health & safety procedures and legislative requirements
* Costing and menu planning
* Stock control and high-quality food production
* Recognised professional culinary qualification
Working Pattern: Full-time, Monday to Friday from 7:00-15:00 Location: Carrickpherish Road, Waterford
