The Rochestown Park Hotel, Cork, is currently seeking an ambitious, dynamic & self-motivated Bistro Manager for its Sutton's Bar & Bistro Operation.

Job Overview
The Bistro Manager will form part of the F&B Bar Management structure and will be responsible for the short & long term planning and management of the Bistro Operation to achieve customer satisfaction and quality service, whilst meeting / exceeding financial goals.
Key Responsibilities:
* To increase Sales - ensuring high standard of quality & service are achieved.
* To continually plan ahead and implement plans & ideas for off peak times, seasonal activities and family gatherings and occasions.
* To manage and develop a team of Bistro Food & Beverage professionals.
* Oversee, monitor & control all aspects of the Bistro Booking System.
* Have a visible presence within the Bistro to ensure that all customer needs are consistently met.
* Resolve guest complaints in a friendly and efficient manner, ensuring guest satisfaction at all times, while maintaining the departmental and Hotel reputation. Record all feedback and strategise with departmental training plan.
* Manage and organise all training for the Bistro team.
* Ensuring the team conform to a consistent high standard of personal hygiene and personal presentation at all times.
* Driving revenues within the department, in line with the Hotel Sales and Marketing Metrics.
* Work in line with the F&B Manager in terms of Health & Safety, HACCP and any other statutory requirements that need to be adhered to.
* Follow best practice in managing costs within the hotel while always being conscious of our corporate and social responsibility.
* Supervisor development, performance reviews, progression planning.
* Employee Engagement.
* Support the HR Manager & F&B Manager with Recruitment, Selection, Retention.
Specific Job Responsibilities:
* Team development, performance reviews, progression planning in conjunction with the F&B Manager & HR Manager.
* All aspects of Cocktails (menu compilation, training, delivery of menu in Suttons Bistro).
* All aspects of Food Service in Suttons Bistro, Private Dining and Room Service.
* Developing and managing promotions and staff incentives for up-selling (e.g. wine, desserts, liqueurs, cocktails) in Suttons Bistro.

Desirable Qualifications / Experience:
* Min 2/3 yrs Previous Experience in a Bistro / Restaurant Management role in the Hotel industry.
* Hospitality / Travel/ Tourism Management Qualification.
* Office Administration & Computer Skills.
* Micros Proficient.
