Job Description
We are seeking a highly experienced and passionate Senior Chef de Partie to join our dynamic kitchen team. In this role, you will oversee a specific section of the kitchen, ensuring high standards of food preparation and presentation.
Key Responsibilities
* Food Preparation & Cooking:
o Supervise and manage a designated kitchen section (e.g., grill, sauté, pastry).
o Prepare and cook dishes to high culinary standards, ensuring consistency and quality.
o Follow recipes, portion control guidelines, and plating specifications.
* Team Leadership & Training:
o Mentor and train junior chefs, ensuring skill development and kitchen efficiency.
o Assist in staff scheduling, section organization, and workflow management.
o Ensure clear communication with kitchen and front-of-house teams.
* Quality Control & Standards:
o Maintain high standards of hygiene, HACCP food safety proficiency.
o Monitor food stock levels, minimizing waste and ensuring proper stock rotation.
o Support menu development, contributing creative ideas for new dishes and improvements.
Requirements
* Proven experience as a Chef de Partie or Senior Chef de Partie in a high-volume or fine-dining restaurant.
* Strong knowledge of various cooking techniques, kitchen equipment, and food safety regulations.
* Ability to lead and train junior team members effectively.
* Excellent organizational and time-management skills.
* Passion for culinary excellence and innovation.
* Flexibility to work evenings, weekends, and holidays as needed.
PREFERRED QUALIFICATIONS
* Culinary degree or relevant certification.
* Experience in high street restaurants is a plus.
* Passion and Knowledge of modern Irish cuisine.
