Talbot Hotel Clonmel, part of the Talbot Collection, is currently recruiting for a Junior Sous Chef to join our team.
Main Duties:
1. Supervision of kitchen staff in Sous Chef/Head Chef's absence
2. Preparation and presentation of all food for designated areas
3. Assist the Sous Chef/Head Chef in carrying out all HACCP controls as required under legislation and ensure all paperwork regarding HACCP is completed
4. Maintain the high standards of cookery as laid down by the company
5. Assist the Sous Chef/Head Chef in training, developing, and motivating the kitchen team
6. Create, update, and implement departmental SOPs
7. Assist the Sous Chef/Head Chef with menu reviews and costing
8. Develop, train, and coach kitchen staff to the standards required by the kitchen
9. Delegate duties and tasks to staff to meet objectives and maximize resources
10. Assist the Sous Chef/Head Chef in liaising with suppliers and sales representatives
11. Be aware of the day's business in all Departments within the Hotel
12. Assist the Sous Chef/Head Chef in managing the ordering of supplies
13. Ensure high standards of health and safety are always maintained
The successful candidate must have:
1. Previous experience in a similar position, preferably in a 4* hotel environment
2. Be HACCP trained and hygiene focused
3. Have a professional appearance and a positive work attitude
4. Ability to work as part of a team in a busy kitchen environment
Be flexible and available to work varying shifts, 5 out of 7 days, including weekends.
