JOB DESCRIPTION FOOD & BEVERAGE PERSONNEL
Purpose of Job:
To ensure the cleanliness and correct mis-en-place set up of the Food & Beverage area you are assigned to, prior to Service, ensuring the guests are warmly welcomed, orders taken efficiently and served to the agreed standard to always ensure guest satisfaction.
Responsible to: Restaurant Manager / Manager on Duty
Main Duties:
1. To arrive to work dressed in full uniform on time and freshly groomed in accordance with company standard.
2. Make sure to have an up-to-date copy of the Daily Function Sheets – Reception can print one if required. This is essential as information is constantly changing.
3. Preparation of Restaurant for Breakfast/Lunch/Dinner service, adhering to cleaning schedule and mis-en-place standard.
4. Guests to be welcomed in a warm and friendly manner and always treated with the utmost courtesy.
5. Familiarise yourself with the menu and clarify any queries with your manager/chef.
6. Correct Service Procedures to be always followed, i.e. change of cutlery once the order has been taken, removal of dirty crockery, cutlery, glassware, etc.
7. Meals to be served efficiently with the minimum of fuss or delay.
8. Cutlery and Crockery to be scraped, sorted and properly stacked in wash up area.
9. Restaurant Manager, Supervisor or Duty Manager to be informed of any special requirements, difficulties or complaints.
10. Responsible for station, when assigned to one - not forgetting teamwork, i.e. if your station is quiet, help one of your colleagues.
11. Service Cloths to be always used.
12. At the end of each service, the Restaurant has to be re-set and fully prepared for the next service before going off duty.
13. To carry out duties by the cleaning schedules.
14. During peak trading periods you may be required to assist in other areas, i.e. Banqueting or Bar area.
15. To be aware and comply with company policy regarding:
* Fire
* Health and Safety
* Hygiene
* Customer Care
* Security
1. To ensure a high standard of personal hygiene and grooming.
2. To ensure that all reasonable care is taken for the health & safety of yourself, other employees, guests and other persons on the premises.
3. Attend training sessions/meetings as required.
4. To read, understand and comply with your responsibilities as defined in the Health & Safety Statement (Copy available in the HR Office) and Staff Handbook (Copy available in the HR Office).
5. To carry out any other reasonable request by Management.
Dress Code/ Personal Appearance:
As you are liable to come into contact with customers, it is important you present a professional image with regards to appearance and standards of dress.
Where uniforms are provided, these must be worn at all times whilst at work and laundered on a regular basis.
Where uniforms are not provided, you should wear clothes appropriate to your job responsibilities, and they should be kept clean and tidy at all times.
Members of staff are requested to report for duty freshly showered and with a neat and tidy appearance appropriate to his/her position, always setting an example for other members of staff. Uniform required is black shirt/blouse IRONED, black trousers IRONED, black polished shoes and the hotel provides the waistcoat.
The wearing of piercing studs is prohibited on all facial areas excluding the ears.
Anyone handling food must keep their fingernails short and clean, long nails can result in bacteria harbouring underneath them and can then contaminate food.
