The Award Winning Ballygarry Estate Hotel & Spa, in the vibrant town of Tralee, currently has an exciting opportunity for a Chef de Partie to join our outstanding kitchen team!
Responsibilities include:
* Creating menu's that caters to the preferences and dietary restrictions of hotel guests
* Planning and organizing the production of dishes, including prepping ingredients, cooking, and plating
* Responsible for preparing, cooking and serving of food according to recipes and as directed.
* Checking on a daily basis food preparation regarding portion size, quantity and quality as laid down in the recipe index.
* To check all food deliveries are to specification
* Managing inventory and ordering supplies to maintain adequate stock levels
* Ensuring that all food products are fresh, of high quality, and comply with hotel standards
* Help in the preparation of sauces etc. for lunch service
* Set up of Banbury for lunch service
* Supervising and training kitchen staff, assigning tasks, and ensuring effective teamwork
* Assisting the Head Chef in planning menus and creating dishes.
* Managing and training a team of commis chefs and other kitchen staff.
* Ensuring that food preparation and cooking techniques are followed and maintained to high standards.
* Supervising the preparation and presentation of all dishes in their section.
* Assisting with food cost control by minimizing waste and portion control.
* Adhering to food safety and sanitation regulations, including proper storage, handling, and cooking techniques
* Collaborating with other departments, such as front desk and dining room staff, to ensure a seamless breakfast service for guests
* Developing and maintaining positive relationships with suppliers to ensure timely delivery of fresh and high-quality ingredients
* Maintaining a clean and organized kitchen environment, including proper storage and maintenance of kitchen equipment
* Monitoring food costs and implementing cost-saving strategies without compromising on quality
* Staying updated with industry trends and innovations in breakfast cuisine to continuously improve menu offerings and guest satisfaction.
* To provide explanation of menu items to Food & Beverage team.
Overall, The Chef de Partie plays a crucial role in ensuring that high-quality meals are prepared and served to our guests in a timely manner. They are responsible for managing their section of the kitchen and maintaining the standards set by the hotel.
