Glenlo Abbey Hotel and Estate is located on the bank of Lough Corrib on a 138-acre estate with the original 18th century manor house dating back to the 1740's. The Hotel comprises of 73 guest bedrooms, 11 Luxury Lodges, Corrib Room (catering for meetings, events, and weddings for up to 170 guests), River Restaurant, Palmers Bar and Kitchen, Oak Cellar Bistro, 2AA Rosette Pullman Restaurant (an original Dining Carriage from the Orient Express), Glo Spa & Wellness, 9 hole Championship Golf Course and a 21 bay driving range.
This is an exciting opportunity to join an innovative and progressive Irish hotel group, The MHL Hotel Collection.
We are currently seeking to recruit an experienced Sommelier for our exclusive Pullman Restaurant at the Glenlo Abbey Hotel & Estate (part of the MHL Hotel Collection).
The Pullman Restaurant is Galway's most unique dining experience. Diners take a step back in time aboard the Orient Express, which comprises of 2 original carriages from the Orient Express, beautifully restored without losing any of their original character and set on the grounds of the hotel with views of the golf course, Lough Corrib.
Key Responsibilities:
* Collaborate with the Wine/Beverage team to curate our wine and beverage program.
* Wine menu management, constantly sourcing new and relevant wines to match the Food Profile.
* Balancing the wine list.
* Working closely with Chef de Cuisine with tasting and matching wines.
* Serving guests upon arrival, taking aperitif orders, presenting wine lists and providing knowledgeable service to boost sales and guest experiences.
* Training in pre/post dinner drinks, assisting in sparking the passion within the service team.
* A genuine passion for all things beverage.
* Offering personalized food and wine pairings to Guests.
* Ensuring that wines are served at the perfect temperature and in appropriate glassware.
* Engaging in wine and beverage training for the service team, enhancing their knowledge and confidence.
* To set the restaurant Mise en Place to the required standard and Mise en Place of beverage area when required.
* Assisting in the deliveries and cellar maintenance.
* To update inventory daily.
* Assist the Restaurant Manager in the management of the Service team.
* To restock all wines sold during the previous service.
* Other duties as assigned by the Management.
What we expect from you:
* 3 years Proven work experience as a Sommelier / Head Sommelier.
* WSET Level 3 as a minimum standard.
* Comprehensive knowledge of different types of wines, wineries, regions and vineyards.
* Excellent communication and presentation skills - Strong time management and organizational skills.
* High standards of hygiene and personal grooming.
* A self-motivated and personable individual.
* Ability to provide exceptional customer service and a natural want to make a difference.
* Ability to work well with others, inspire & lead.
