We have a fantastic role for an experienced Head Chef/Senior Sous Chef who enjoys cooking to a very high standard and working with local produce
Some of the duties of the role will be:
* To be a hands on Head Chef who can lead by example and be responsible for all aspects of food preparation and service
* Recruitment/training and development of new and existing staff
* Menu planning for the restaurant
* Sourcing the best products from local suppliers
* To ensure and excellent GP and wastage is kept to a minimum
* Monitor all KPI's and keep in line with budgets requirements
* Review and monitor suppliers regularly
* To ensure excellent HACCP is carried out throughout the kitchen and all staff are trained in this
* A consistent high level of food is maintained at all times
* To adhere to all SOPs which are already in place
The ideal candidate:
* Previous experience as a Head Chef/Senior Sous Chef in a busy 4/5* hotel or upmarket restaurant
* Experience with menu planning for restaurant and functions
* Excellent financial acumen and has a proven track record in achieving excellent GPs and Food Costs
* Strong culinary and creative background, and keeps up to date on industry trends
* A good leader and motivator who can lead by example and remain a calm presence in the kitchen
* Excellent communication and organisational skills
* Ability to produce a very high standard of food
* Has a passion for cooking and this will come through in the menus you produce
* Can legally work in Ireland fulltime without restrictions
