Job Description
This is an on-site role for a Director of Food and Beverage. The Director of Food and Beverage will be responsible for leading and managing all aspects of the food, beverage and wine offering at Sheen Falls Lodge and Ring of Kerry Golf Club. We are looking for a passionate manager that has excellent food, beverage and wine knowledge, attention to detail, is standard driven and who can lead the team and manage the financial aspects and objectives of the department.
The Director of Food and Beverage will report directly to the General Manager.
Key Responsibilities:
* Oversee and ensure that all objectives are met in the food & beverage department under key result areas including:
o Business development
o Financial performance and objectives
o Overall quality & standards
o Day to day operations in each outlet
o Culture, team development, engagement, and retention
o Customer service and satisfaction
* Lead all facets of the food & beverage operations in both Sheen Falls Lodge and Ring of Kerry Golf Club, ensuring five-star quality excellence in both presentation and service.
* Be commercially aware and focused on revenue generation and cost control in food & beverage.
* Work closely with the senior leadership team on the overall strategy of the food & beverage department.
* Foster a culture of continuous learning and development within the team.
* Work closely with HR to attract, hire, and retain the right talent.
* Develop close relationships with suppliers to enhance the local food & beverage offering.
* Continually assess and update existing SOPs, staff training, and respond to customer satisfaction surveys.
* Inspire the food & beverage team to deliver high standards.
* Utilize technology and systems to the department's advantage.
* Manage stock and work closely with the executive chef.
* Ensure food & beverage KPIs and gross profit margins are met each month.
* Maximize revenue through effective management of operations across food & beverage outlets.
* Manage payroll costs of the department.
* Organize the efficient operation of all food & beverage outlets in the hotel.
* Ensure effective staff communication and training.
* Further develop the department.
* Maintain a visible presence across food & beverage outlets, providing direction to departmental managers.
* Collaborate with the Sales and Marketing department to provide content for promotional materials as required.

Qualifications
Qualifying Criteria:
Must Demonstrate:
* Fluent level of English both verbal and written.
* Previous experience as a Director of Food & Beverage or Assistant Director of Food & Beverage within a similar luxury five-star service and product environment, including fine dining for a minimum of 2 years.
* Extensive knowledge and experience of food, beverage, and wine service at 5 * level.
* Experience in weddings and events food & beverage service.
* Excellent attention to detail, interpersonal and organisational skills, strong leadership, and people management skills.
* An understanding and experience of operational controls, budgeting, payroll, forecasting, inventory control, managing GP’s, wages and profit and loss management for the overall food & beverage department.
* Demonstrated track record of achieving financial objectives on all food & beverage objectives and KPIs.
* Hospitality Management qualification or equivalent.
* Proven track record of improving standards and procedures in the food & beverage department.
* Experience meeting the expectations of high-end leisure market guests.
* Proven problem-solving skills.
* A stable and progressive career to date in quality-oriented operations.
* Must have the right to work in the E.U.
* Excellent presentation and polished manner with faultless customer service skills.
* Excellent IT Skills including proficient use of MS Office and Excel.
* Positive attitude towards guests and colleagues at all times.
* Self-motivated and able to work independently with good personal organization.
Desired:
* Experience and understanding of 5 Star standards, the Relais & Chateaux brand, and Irish regulations.
* Knowledge of the Volante system is an advantage.
