We have a fantastic role for an experienced Head Chef/Senior Sous Chef who enjoys cooking to a very high standard and working with local produce
Some of the duties of the role will be:
1. To be a hands on Head Chef who can lead by example and be responsible for all aspects of food preparation and service
2. Recruitment/training and development of new and existing staff
3. Menu planning for the restaurant
4. Sourcing the best products from local suppliers
5. To ensure and excellent GP and wastage is kept to a minimum
6. Monitor all KPI's and keep in line with budgets requirements
7. Review and monitor suppliers regularly
8. To ensure excellent HACCP is carried out throughout the kitchen and all staff are trained in this
9. A consistent high level of food is maintained at all times
10. To adhere to all SOPs which are already in place
The ideal candidate:
11. Previous experience as a Head Chef/Senior Sous Chef in a busy 4/5* hotel or upmarket restaurant
12. Experience with menu planning for restaurant and functions
13. Excellent financial acumen and has a proven track record in achieving excellent GPs and Food Costs
14. Strong culinary and creative background, and keeps up to date on industry trends
15. A good leader and motivator who can lead by example and remain a calm presence in the kitchen
16. Excellent communication and organisational skills
17. Ability to produce a very high standard of food
18. Has a passion for cooking and this will come through in the menus you produce
19. Can legally work in Ireland fulltime without restrictions
