Key Responsibilities:
* Oversee all aspects of wine service throughout Hayfield Manor, including our Fine Dining and casual restaurants.
* Establish clear communication with guests, building rapport and ensuring excellent service.
* Ensure weekly wine orders are placed and stock levels are maintained.
* Further develop the house wine list to reflect 5* standards, focusing on quality and variety.
* Stay up to date with the menus to provide the best wine pairings for each dish.
* Maintain and develop the wine cellar, ensuring optimal storage and inventory control.
* Carry out pre- and post-service duties to ensure smooth operations.
* Work efficiently and ensure that guest needs are met in a timely manner.
* Assist the Food & Beverage team with staff training and development.
* Ensure wine service standards are consistently upheld while seeking opportunities for improvement.
The Ideal Candidate:
* Minimum Level 2 WSET Certificate in wine or equivalent qualification.
* Extensive knowledge of both new and old world wines.
* 1-2 years sommelier experience, preferably within a 5* Hotel OR Michelin* Restaurant setting.
* Strong expertise in food and wine pairings and the ability to make expert recommendations.
* Passion for food and service, with a drive for innovation.
* Excellent selling skills and the ability to adapt to guest preferences.
* Strong organizational skills and the ability to think quickly under pressure.
