Rate of pay: €21.00 per hour
Job Purpose:
Responsible for the provision of seasonal food in a contemporary style in line with the Gather & Gather brand. To maintain standards of quality, food hygiene and health and safety. Running a busy production kitchen operation with a large volume of meals, responsible for the full management of the kitchen and the kitchen team. Delivers all budgetary targets and provides high standards of customer service. To work on a shift basis as required by the business; own transport is essential.
Key Responsibilities and Accountabilities:
1. Food Production:
• Fully understand and interpret the Gather & Gather brand in terms of food and food service.
• Develop and plan menus that align with client and customer expectations.
• Prepare and oversee all food preparation to the highest standard.
• Ensure food is seasonal, of known provenance, and where possible sourced locally.
• Produce food in a timely fashion to ensure smooth service to customers.
• Ensure all appropriate ingredients are available and identify shortages.
• Deputise in the Exec Chef’s absence where appropriate.
• Assist Exec Chef and other chefs in developing new service styles and food concepts.
• Communicate requirements for planned menus and order necessary ingredients.
• Coordinate stock ordering and stocktaking for the operation.
• Plan menus and prepare food to minimise wastage.
• Control costs through efficient purchasing and use of existing stock.
• Ensure budgetary targets are delivered on site.
• Responsible for ensuring weekly and monthly stock takes.
• Administer unit controls and keep records using appropriate systems.
2. Managing / Developing a Team:
• Manage the kitchen team ensuring they are aware of Gather & Gather standards.
• Lead the kitchen team in producing high-quality seasonal food.
• Conduct daily briefings before service.
• Provide feedback and coaching on performance.
• Provide necessary on-job training.
• Carry out performance appraisals as directed.
• Manage poor performance in line with Gather & Gather processes.
• Induct new staff into their position.
• Monitor the attendance of the kitchen brigade.
3. Health & Safety:
• Comply with health, hygiene, safety, quality standards including COSHH and HACCP.
• Ensure the kitchen team has up-to-date COSHH and Food Hygiene training.
• Ensure equipment and food temperature readings are taken daily.
• Ensure food is labelled and dated in fridges and freezers.
• Report any equipment and/or building fabric faults.
4. Customer Service:
• Seek customer feedback and use it to develop food and service offerings.
• Maintain a professional image with clients and customers.
• Work effectively with colleagues to ensure excellent customer service.
• Attend to customer needs and respond appropriately to queries or complaints.
• Stay updated with customer needs and communicate ideas to the Exec/Company Chef.
5. Occasional Responsibilities:
• Attend training courses and Gather & Gather meetings when necessary.
• Act as a resource to the General Manager, Exec Chef, Company Chef, and Food Development Director.
