Job Title: Chef de Partie
Employer: Mungret House ltd T/A Westward Ho Bar and Grill
Location: Castle Mungret, Mungret, Limerick, V94H729 and other locations when necessary
Salary: €34,000 p.a.
Working hours: 39 hrs/week
Responsibilities:
* To ensure that all stocks are kept under optimum conditions.
* Wearing full uniform & name badge at all times as instructed by our employee handbook.
* To ensure that all Health & Safety requirements are adhered to. Comply with all current and future HACCP legislation.
* To ensure that all dishes are being prepared to the correct recipe and to the correct quantity.
* To ensure that all dishes reach the hot plate or passé correctly garnished, the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
* To ensure that your section is being kept clean and tidy at all times.
* To ensure that junior cooks and trainees receive the right training and optimum guidance.
* To ensure that any anticipated shortages are communicated promptly to the sous chef or head chef.
* To ensure that no horseplay is allowed in your section and that all staff under your control are treated fairly and with courtesy.
* To deputise in the sous chef's absence and take charge of the kitchen when directed to do so.
* Liaise with your colleagues – have a good working relationship.
* To attend meetings, training courses and seminars as and when required.
* Highlight all Health & Safety, Fire Safety and HACCP issues to the head chef and/or restaurant manager.
Requirements:
* 2 years’ experience as a Commis Chef.
* HACCP knowledge and experience.
* Able to work as part of a team.
