Job Description:
The Metropole Hotel is looking for an experienced Food and Beverage Operations Manager to join the Senior Management Team.
Reports to: Group F&B Manager/General Manager

Under the general guidance of the General Manager, assess, evaluate and ensure that long-term and short-term goals of all Food & Beverage outlets are met. Direct and manage all food & beverage activities across the F&B outlets to maximise food & beverage revenue, profitability and quality goals by developing and executing marketing strategies, up-selling strategies, controlling costs, and providing quality service and products to guests. All work will be in line with the hotel's guidelines and business plan, and the hotel's corporate guidelines and service concepts.
TASKS, DUTIES AND RESPONSIBILITIES:
1. ASSESS, EVALUATE AND ENSURE FOOD & BEVERAGE GOALS ARE MET
2. Assist with developing, implementing and evaluating a general business plan and strategies to ensure optimum guest satisfaction, sales maximisation and profitability.
3. Monitor present and future trends, practices and systems in the food & beverage industry to ensure that the hotel's food & beverage operations are competitive in the marketplace.
4. Conduct weekly inspections of the food & beverage regions to ensure the property is kept in the best condition and recommend preventive maintenance to the General Manager/Deputy GM where needed.
5. Participate in development of recognition programmes for staff, advertising and promotional programs and campaigns to increase market awareness and penetration.
6. Randomly inspect all food & beverage regions to ensure facilities and equipment are clean, well maintained and replaced if necessary.
7. Check the food & beverage outlets' reservation lists, hotel arrival list, conference guest list, and VIP list to ensure that own staff is aware of VIP guests.
8. Be proficient in all food & beverage procedures to be a resource when needed.
9. Challenge employees within the department to achieve optimum food cost percentage and service per employee.
10. Control and analyse departmental costs on an ongoing basis; take action to control negative deviation.
11. Audit food & beverage services and quality on a regular basis and develop and implement strategies to improve results.
12. Assist, plan and coordinate in-house activities and package plans with Head Chef and Director of Sales & Marketing.

3. Utilise leadership skills and motivation to maximise employee productivity and satisfaction.
4. Monitor hotel's overall service and teamwork daily.
5. Select and develop strategies to improve guest service, food production techniques and efficiency.
6. Analyse financial reports relating to food & beverage, and take corrective action and follow-up.
7. Coordinate pricing and preparation of menus, beverages, and wine lists by considering local requirements, market needs, competition, trends, potential costs and labour costs, availability of food & beverage products, merchandising and promotions.
8. With Head Chef, maintain an updated recipe file for all food and beverage items to include actual costs, potential costs, and production time.
9. Assist in the preparation of the food and beverage business plan.
10. Assist in the development of the hotel's annual business plan, by developing strategies to increase sales in food & beverage.
