The Grand Canal Hotel is seeking an experienced and motivated Senior Sous Chef to join our dynamic kitchen team.
The role is ideal for a talented, organized, and ambitious chef ready to take on a leadership role in a busy and fast-paced environment. Working closely with the Head Chef, the Senior Sous Chef will play a pivotal role in overseeing daily kitchen operations, ensuring excellence in food quality and service, and driving innovation across all menus.

3. Epic Restaurant: Known for its wholesome breakfasts and versatility in hosting events, Epic is set for a refresh with renovations planned. It’s the perfect space to introduce innovative and seasonal menu ideas. The restaurant caters to tour groups, families, and celebrations, offering a platform for flair and creativity.
Main Responsibilities
1. Assisting the Head Chef in maintaining high standards of quality, service, and presentation.
2. Managing and mentoring kitchen staff, ensuring smooth day-to-day operations.
3. Overseeing food preparation, cooking, and plating to uphold consistent quality.
4. Contributing to the development and implementation of creative, innovative menus.
5. Monitoring allergens and ensuring accurate labeling of dishes, with strict adherence to food safety regulations regarding allergens.
6. Ensuring compliance with HACCP and all health & safety standards in the kitchen.
7. Supporting the Head Chef in inventory management, stock ordering, and cost control.
8. Leading the kitchen team in the Head Chef’s absence.
The Ideal Candidate Will Have
1. Previous experience as a Senior Sous Chef or Sous Chef in a hotel or high-volume environment.
2. A proven track record of managing and motivating kitchen teams effectively.
3. Strong culinary creativity and a passion for high-quality, innovative food.
4. Excellent organizational and time management skills, with attention to detail.
5. A comprehensive understanding of allergen management and food labeling practices, with a strong commitment to guest safety.
6. A solid understanding of HACCP and food safety compliance.
7. A professional culinary qualification or equivalent training.
8. The ability to work in a fast-paced environment while maintaining composure under pressure.
9. Full fluency in English and availability for full-time, flexible shifts.
10. A commitment to continuous learning and development within the culinary field.
