THE ROLE: This position is a full time position - reporting to Executive Head Chef.
To assist the Executive Head Chef in the smooth running of the Kitchen ensuring that all areas of the Kitchen are maintained to the standards required by the Hotel.
Together with the Executive Head Chef, deal with queries concerning the Kitchen staff.
To co-ordinate and execute training of Kitchen Staff.
To be able to motivate staff.
To maintain a safe, hygienic and healthy working environment.
To cook any food on a daily basis according to business requirements for all food outlets.
THE PERSON: This position requires a professional and talented Sous Chef with a natural flair and passion for excellent food quality, exceptional organisational and personal skills are required while continuously improving the product through innovation.

Responsibilities Include: Strong Sous Chef experience Have leadership skills be highly organised, hands on and possess a passion for food Be knowledgeable of the day's business, i.e.
know what reservations are booked in to the Food & Beverage outlets, be aware of outside events that will impact directly on business, etc.
To ensure a high standard of personal hygiene Have a strong awareness and compliance with all health & safety work practices and HACCP Have excellent organisational skills Ensure all dishes leaving the kitchen are prepared to the approved standard of presentation To avoid unnecessary wastage, observe proper portion planning and control and to act in a cost effective, responsible manner Work as a team member as well as using your own initiative To observe all Health and Safety regulations as applicable to employees: Safety, Health & Welfare at Work Act 2005.
