Deli Supervisor - Macs Place Deli
OBJECTIVE:
To assist the Deli & Bakery Manager with the day-to-day operation of the hot & cold deli’s and the fresh food offering on-site. To assist the Manager in ensuring delivery of all delicatessen and fresh food targets (in terms of Food Quality, Customer Service, Sales, Costings, Profitability and compliance with Hygiene Standards) through the effective management of the delicatessen and bakery area and its personnel.
The Job
OPERATIONS - GENERAL
1. Ensures the deli area provides a variety of fresh, well presented, and of the highest quality foods at all times of the day whilst operational.
2. Involved in the recruitment process, training, and cross-training of effective and efficient customer-focused personnel, whilst following company standards and policies.
3. Ensure delicatessen standards are consistently improving in terms of sourcing new products, housekeeping, merchandising, presentation and customer service.
4. Plan for market changes and demands as they arise – seasonality and local activity.
5. Ensure delicatessen promotions are managed appropriately with adequate costing analysis.
6. Ensure all customer complaints are dealt with in the appropriate manner.
7. Ensure HACCP standards are implemented and record sheets are maintained according to requirements.
8. Ensure overall customer service levels within the area are maintained at the required standard and up-selling of add-on items where possible.
9. Assist the Deli Manager with operation of deli to meet pre-set food cost targets through staff training, portion control, waste control, etc.
10. Assist in managing and planning the internal cleaning program to consistently meet QSC requirements.
11. Assist with food ordering from approved suppliers to meet deli requirements.
FINANCE
1. Ensure overheads are controlled and minimised where appropriate through effective management of the area.
2. Ensure delicatessen and bakery sales are maximised through effective supervision of the area.
3. Assist in ensuring delicatessen margins are managed appropriately and profitability of the area is maximised.
4. Promote sales within the delicatessen area & achieve sales targets as established by the store manager.
PEOPLE MANAGEMENT
1. Assist in recruitment, training and development of high-quality personnel for the delicatessen area.
2. Maintain training records and ensure refresher training is provided to personnel in the area as appropriate.
3. Managing the performance of the delicatessen area.
4. Ensure the delicatessen team is motivated.
5. Ensure the delicatessen team comply with requirements of the area in terms of hygiene etc.
6. Assist the Deli Manager with staff rostering to ensure adequate cover within pre-set labour targets.
FOOD MANAGEMENT
1. Ensure effective & compliant HACCP control systems are in place.
2. Ensure policies and procedures about fresh food are implemented and managed.
3. Ensure the area operates within relevant legislation in terms of HACCP.
4. Ensure all relevant record sheets are completed.
5. Ensure you are up to date on all aspects of HACCP and food safety and hygiene requirements and communicate the same to store management and personnel.
6. Assist the Deli Manager with stock control, dating, and stock rotation.
7. Contribute to menu planning & development to ensure a variety of choices.
8. Ensure that pre-agreed menus are adhered to and planned for.
9. Assist in ensuring effective stock control systems are in place ensuring stock is rotated accordingly and out-of-date stock is discarded appropriately.
10. Ensure wastages in the delicatessen area are maintained at a minimum level through effective management of the stock.
11. Identify areas of stock leakage and ensure effective systems are in place to minimise stock loss (e.g. through wastage, and damages).
GENERAL
1. To undertake other additional duties as may be assigned by the Deli & Bakery Manager and Site Manager.

Fast-paced “non-stop” environment. Physically demanding at times due to certain requirements of the business with regards to the level of business, quality of staff, and quantity of staff.
Teamwork is essential to ensure the procedure runs smoothly in all areas, and communication flows.
