Job DescriptionTeamworx are delighted to be recruiting an experienced Executive Sous Chef for a fabulous resort in Co. Wicklow.The main responsibility for this role is to oversee and assist the kitchen brigade in ensuring consistent delivery of 5* standard and high quality of cuisine to the Hotel guests and visitors.
This role would suit an experienced Chef de Cuisine or Executive Sous. The property offers both fine dining and casual dining outlets along with banqueting areas, perfect to suit all guests.
The ideal candidate would have previous experience working in a luxury hotel or busy fine dining restaurant and focused on working with seasonal good quality fresh produce.The role:As Executive Sous Chef you are responsible for all aspects of managing the kitchen areas and outlets ensuring the quality preparation of all menu items to the highest standards.Very strong on implementing standards, menu development, managing GP% and dealing with suppliers.Hands on and enjoys working in a fast-paced environment and ability to control service from the front to ensure maximum results during peak periods.Provides guidance to junior kitchen staff members, including, but not limited to line cooking, food preparation, and dish plating.Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organized for quality assurance.Manages food and product ordering by keeping detailed records and minimizes waste, plus works with existing systems to improve waste reduction, and manage budgetary concerns.Ensuring and controlling levels of guest satisfaction, quality, operating and food cost on an ongoing basis.Monitor and ensuring that the production, preparation, and presentation of food are always of the highest quality.Have a good knowledge of health & safety, hygiene, HACCP and any other legislation.Co-ordinates roster scheduling, labour costs, assists with recruitment, and oversees staff productivity and performance.Passionate and creative with developing and implementing new menu ideas.Working with Executive Head Chef to help develop a team spirit amongst the overall kitchen staff to maintain a cohesive team.Oversee and direct training of new hires and maintain an on-going training program for existing culinary team.Successful applicants must have:Previous experience as an Executive Sous or Chef de Cuisine in a luxury settingExcellent knowledge of standards and consistent quality in line with our 5* standardsGood Training &/or recognised chef qualificationsGood working knowledge of HACCPStrong interpersonal and communication skillsYou must be available to work shifts including weekend and bank holidays.· What's on offer: Salary of €60,000 doeComplimentary Health Club and pool membership.Discounted for friends and family members.Career Development and TrainingNumerous employee reward programmesEducational Assistance – for Hospitality & other professional coursesOn-site GymBike to work scheme & other commuter plans.Meals during shifts and Healthy snacksOpportunities for advancement & Career DevelopmentEmployee Referral BonusFinancial Planning ResourcesApply today or call Sarah Strachan (Head of Hospitality) on for more information#retailcareerRequirementsChef
