Chef de Partie
We are excited to announce an opportunity for a Chef de Partie to join our Kitchen team at Ard na Sidhe Country House. Situated on the picturesque shores of Carragh Lake, Ard na Sidhe is a charming manor house offering a peaceful retreat and a “home away from home” experience. With its idyllic location and intentional disconnection from modern technology, our property provides guests with an escape from the hustle and bustle of everyday life.
We are currently recruiting for a Chef de Partie for the 2025 season, as our hotels are temporarily closed to guests during this period.
Job Responsibilities
As a Chef de Partie, you will:
Prepare and cook food for your designated section under the guidance of the Head Chef and senior kitchen team.
Ensure food meets agreed-upon standards for quality, taste, and presentation.
Work collaboratively with other chefs and team members.
Follow recipes and maintain consistent presentation of all dishes.
Demonstrate skill, creativity, and attention to detail in all food preparation.
Ensure all required ingredients are prepared and ready for service.
Minimize wastage through efficient use of resources.
Maintain a clean, safe, and hygienic kitchen environment in compliance with Health & Safety and HACCP guidelines.
Organize daily tasks, including mise en place preparation and service, in collaboration with chefs.
Store and rotate stock efficiently to ensure freshness and compliance with food safety standards.
Keep fridges clean and organized, ensuring all items are properly labeled and stored in food-safe containers.
Write daily dry store requisitions and manage stock levels to meet operational needs.
Follow specifications for portion size, quantity, and quality as outlined by the Head Chef.
Foster positive relationships with colleagues and motivate the team as needed.
Take responsibility for completing daily mise en place and storage tasks in the absence of the Head Chef.
Attend all scheduled training sessions related to job and hotel requirements.
Take initiative and work independently during shifts, ensuring the smooth operation of the kitchen.
Job Requirements
Previous experience in a four-star hotel is desirable.
Familiarity with Health & Safety guidelines and HACCP standards.
Knowledge of kitchen appliances and their functions.
Eligibility to work in Ireland.
A strong team player with enthusiasm for all aspects of hospitality.
Fluency in English, both verbal and written.
Adequate knowledge of allergens and the ability to identify allergens in dishes.
Ability to maintain a safe, hygienic, and organized kitchen environment.
A positive attitude and the ability to work under pressure.
Strong attention to detail, creativity, and a passion for culinary excellence.
Effective planning and organizational skills.
