We are now recruiting for a Head Chef to join our team in Clayton Hotel, situated in Ballsbridge.
Scope of the Role:
The Head Chef is fully responsible for the entire kitchen operation from planning menus, purchasing cycle, food production and service standards, to achieving margins, managing HACCP, and developing the team. This represents a fantastic career move for an ambitious chef with the highest standards.
Key Responsibilities include:
* Manage & motivate chefs and catering assistants daily to ensure good work relations and delivery of desired standards.
* Assist in planning menus for events, catering, and seasonal changes.
* Practice high standards of personal hygiene at all times in terms of grooming & wearing proper attire.
* Chair weekly kitchen meetings & report back to directors following this.
* Ensure adequate safety measures are in operation and maintain equipment & appliances.
* Assist in the practical support and implementation regarding staff training & identify the need for additional training.
* Assist with monitoring customer satisfaction in relation to service provided by communicating with front of house staff and ensuring they have a good understanding of specials and dishes coming from the kitchen.
* Participate in all quality programmes.
* Assist in reviewing & updating policies, procedures & systems.
* HACCP trained.
* Ability to produce high quality and consistent dishes from our menu as well as creative specials.
* Liaise with suppliers for orders.
* Keep a tidy, organised kitchen & stock taking.
