Dromoland Castle, one of Ireland's most prestigious five-star hotels, is seeking an experienced and dedicated Restaurant Manager to join and lead our F&B team. The successful candidate will oversee the day-to-day operations, ensuring a 5-star standard and service is delivered to our guests at all times while meeting the department's financial objectives. The position of Restaurant Manager is a key role, and we are seeking a highly motivated and established individual who can efficiently manage our offering of breakfast/lunch, dinner, private dining, private/public functions, and afternoon tea, making a real impact!
Overview of Role:
* Managing all aspects of the Earl of Thomond Restaurant and Private Dining Operations.
* Communicate effectively with all relevant parties and lead your department in a structured and organized manner.
* Deliver an excellent experience to all guests in accordance with Dromoland Castle standards of service.
* Maintain a high level of team ethos, ensuring all F&B staff are motivated and supported.
* Lead by example, showcasing a strong floor presence, providing a welcoming experience, and being involved in a 'hands-on' capacity.
* Implement a standard of service for the Food & Beverage department.
* Achieve and maintain costs in line with F&B budget.
* Ensure menus are correct and current.
* Liaise with the Head Chef to ensure smooth service between the kitchen and Food and Beverage outlets.
* Liaise with other Food and Beverage departments to ensure that all resources are equally shared, and that the entire Hotel operates in a unified manner.
* Regularly research, recommend, and implement sales initiatives and cost savings while maintaining the standard of service and generating new ideas for the Earl of Thomond Restaurant to maintain a competitive market-leading edge.
* Create weekly rosters via the Alkimii system, ensuring information is accurately recorded for timely payroll processing.
* Work in conjunction with Human Resources in the recruitment and selection process.
* Be aware and analyze all forthcoming business on a regular basis and be aware of all daily and future business requirements.
The Ideal Candidate:
* Possess a 3rd level qualification in Hotel Management or equivalent.
* A minimum of 3 - 4 years' Management Operational experience within a luxury five-star Hotel/Property.
* Self-motivated with excellent communication and interpersonal skills.
* Ability to lead and motivate effectively.
* Strong organizational skills.
* Attention to detail is essential.
