This casual chic venue is set to reopen in June after extensive renovation works. Part of a larger business, their aim is to create a unique and vibrant dining opportunity featuring fresh, seasonal Irish produce. They now seek an experienced Restaurant GM to be responsible for the overall management of efficient and profitable restaurant operations.
Role responsibilities include:
1. Assist with menu planning and costing
2. Review and update job descriptions and SOPs as required
3. Undertake/participate in recruitment and onboarding of the full Restaurant Team, assisting the Head Chef as appropriate
4. Prepare/approve Team rosters, with a strong focus on managing labour costs
5. Ensure the Front of House and Back of House teams work together and are well organised and well supported
6. Work collaboratively with all other departments
7. Manage/oversee purchasing for the full Restaurant
8. Always seek improvements/ new opportunities/ new trends
9. Support the Head Chef in ensuring the production of consistently great food
10. Ensure the highest level of food safety and cleanliness of the workplace at all times
11. Promote a safety culture and safety awareness
12. Adhere to health & safety training, policies, and procedures and ensure compliance with HACCP/GDPR/RSA legal requirements
13. Identify and manage training needs, including your own, with a focus on succession planning
14. Deal with any staff issues in a comprehensive and timely manner.
15. Identify opportunities to recognise and reward Team members
16. Ensure that an excellent food and beverage service to all guests at all times
17. Work with the Head Chef to manage portion control and food costs and to minimise food waste
18. Working with the Head Chef to ensure that the Kitchen is properly maintained at all times, and that cleaning schedules are set up and maintained
19. Prepare management and other reports and make presentations
20. Attend relevant meetings
21. Proactively identify issues and solutions and discuss with Senior Management
The ideal candidate will have at least three years’ experience as Restaurant Manager / General Manager within a quality dining destination, opening experience an advantage. Further candidate attributes include:
