The Kilkenny Ormonde Hotel are currently recruiting a Full-time Head Chef. Main responsibilities for the role: Standard of Menus and food produced. Management of Kitchen team Ensuring margins and costs are maintained at the agreed levels. Staff Food and Staff Canteen Development of Kitchen Team Compliance with Health & Safety regulations Key duties: Efficient Food Production and Delivery in a timely and effective manner clearly communicated specifications of menus re SOPs To hold daily meetings/briefings with the team to ensure smooth running of all kitchen departments. To be an ambassador for the Kilkenny Ormonde Hotel and strive to improve and innovate the Culinary Offering in all outlets To ensure that all staff are constantly trained to effect good portion control and pleasing presentation of all dishes. They must follow agreed standards. To ensure that all areas under your control satisfy the most stringent hygiene requirements and HACCP is fully complied with. To regularly hold maintenance checks to ensure that no equipment breaks down where possible. Liaise with maintenance manager and highlight any concerns.
