Candidate must be resident in Ireland with permission to work in Ireland OR hold a current Work Permit in Ireland.
Must have at least 3 years of experience in similar property.
Responsibilities:
1. Support the Sous Chef & Head Chef in all aspects of kitchen management.
2. Fully operate and control the pastry section.
3. Ensure a quality product is delivered.
4. Prepare & serve desserts for Breakfast, Conferences, Bar Food, Bistro Dinner & Functions from 30-300 guests.
5. Follow any instructions given by the Health & Safety Manager and offer full support at all times in the implementation of all necessary controls.
6. Ensure the duties of the kitchen porters are completed to the required standard.
7. Ensure service runs smoothly and check each dish that leaves the kitchen to ensure quality.
8. Communicate daily business to all chefs and allocate duties where necessary.
9. Overlook all dishes going out & ensure they are to the standard required.
10. Assist the Chef in maintaining quality of ingredients and suppliers.
11. Assist and be aware of stock rotation.
12. Organise and make ready all material & utensils necessary for the shift.
13. Work with other departments and assist where necessary.
