Shift: 12PM - 8.30PM
We are currently seeking to recruit a talented and experienced Sous Chef for a full-time role based in Dublin.
We specialise in servicing the corporate and private market and pride ourselves in providing high quality innovative food. We are a young company in a growth phase and the successful candidate will be required to build on our reputation while building a team for the future.
The ideal candidate will have previous senior chef and volume experience, will be an excellent chef with a passion for great food and have very good attention to detail.
Key requirements:
* Responsible for the consistent high-quality production of dishes.
* Assist with writing seasonal menus keeping within the assigned budget and controlling the food orders along with the Head Chef (6 weeks out). Follow guidelines and templates given.
* Ability to effectively train and manage a kitchen team on menus, knife skills, monitor all chef issues highlighting and identifying areas of concern for more training.
* Addition/Inclusion of Vegan/Gluten-free and Halal dishes into menus.
* To ensure all security protocol and procedures are adhered to.
* Manage and control waste according to building regulations.
* Monitoring and controlling stock levels in fridges/stores/chemicals/freezer.
* Ensures all food items are prepared and handled in a timely and sanitary manner while adhering to Health and Safety Guidelines.
* Promote a safe working environment and execute companywide safety programs and initiatives.
* Direct team on daily tasks to ensure quality and consistency of production. Coach team on best practices.
* Mentor and train team towards promotion and overall team growth.
* Instruct team on duties and techniques, foster growth, understand individual strengths and weaknesses.
* Attend all scheduled employee meetings and bring suggestions for improvement.
* Collaborate with management to seek new opportunities to improve the customer experience.
* Recommendations on scheduling, workplace improvements, and safety management.
* Support and assist the head chef by overseeing day-to-day operations, including training, supervising, and monitoring food quality; must be present during service hours.
* Lead the kitchen brigade to ensure that the Facebook HACCP Manual documents are checked and signed off on a daily basis.
* Involved in the hiring process; interviewing, trialing, training.
* Perform additional job-related responsibilities, although not detailed, as requested by upper management.
