by Forbes Travel Guide 2021 and retained in 2024.Duties of our Junior Sommelier will include: To provide wine & beverage service to guests in accordance with the hotel’s standards
and legal guidelines. To ensure Guest satisfaction is achieved in relation to food and beverage service in
restaurant(s). Efficient and professional food & beverage service operations, maintain standards and
controls. To comply with Red Carnation Top 12 Service Standards, terms and
conditions of employment and operational practices and procedures. The key responsibilities for the successful applicant will include: Ensuring that the wines for all functions and parties are in stock and are at the correct
temperature prior to the function taking place. Monitor all wine storage facilities to ensure that proper storage techniques are being
used. Ensure the highest standards of cleanliness are being kept in the storage areas. Ensure the mise en place is ready in a timely manner for each service. To carry out the service of wine to Red Carnations standard at all times. To use guests names discreetly & professionally according to the Leading Hotels and
Red Carnation standard. To promote, describe and confidently sell beverages. Have a good understanding of the Wine list and beverage menus. Maintain cleanliness and condition of wine menus & wine equipment in the
