FOOD & BEVERAGE MANAGER | CORK | PERMANENT My Client is looking for a new Food & Beverage Manager to join their team in their amazing 4* hotel in Cork.
THE ROLE| This role involves managing multiple bars, overseeing staff, stock, and cash control, ensuring health and safety compliance, and maintaining high service standards while meeting financial and operational targets.
RESPONSIBILITIES| Oversee Bar Operations: Manage the day-to-day activities of various bars & restaurants in hotel.
Efficient Roistering: Ensure weekly staff rosters are created and maintained to meet operational needs.
Wage Control: Keep wage costs in line with budgeted targets through effective staff scheduling.
Cash Control: Ensure proper cash handling, minimise till overfills, reconcile credit card payments daily, and plan cash lifts according to bar trading patterns.
Staff Training: Collaborate with the HR Manager and departmental heads to deliver comprehensive training for all bar staff.
Financial Performance: Work towards achieving set financial goals and targets for bar operations.
Stock Management: Handle purchasing of stock while ensuring compliance with company policies on purchase orders and budgeting.
Regulatory Compliance: Ensure adherence to all relevant laws and regulations specific to bar operations, including health and safety and licensing.
Staff Communication: Regularly communicate with employees, HR, and senior management regarding staff performance, customer care, timekeeping, and work quality.
Policy Enforcement: Enforce company policies on staff conduct, including disciplinary and grievance procedures.
Shift Management: Oversee smooth operations across both AM and PM shifts, including coffee service, lunch carvery, afternoon food service, evening bookings, and bar trade.
Stock Control: Ensure accurate stock management by checking deliveries, minimising waste, preventing theft, monitoring margins, and maintaining par stock levels.
Health & Safety: Ensure safe operation of machinery, adherence to health and safety protocols, conduct fire and accident drills, report hazards, and ensure food safety compliance, including HACCP training.
REQUIREMENTS| Minimum 2+ years experience in a similar role.
