Job Description
The Rochestown Lodge Hotel is a modern three-star hotel located on the fringe of Dun Laoghaire town and short distance to Dublin city centre. It offers 900 spacious guest rooms, a bar restaurant, and a selection of meeting rooms.
Facilities in the hotel include a 15 metre deck level swimming pool, gym, and Spa.
As a Senior Sous Chef, you will report directly to our Head Chef. You will be a professional, focused chef with a flare for food presentation and experience working as a Sous Chef.
You will work closely with the Head Chef to oversee the smooth running of our kitchen, ensuring consistency and high standards of food for our restaurant & bar.
* Plan menus and ensure food gross profit targets are met
* Manage the operations of the kitchen in an organised, hygienic manner at all times, adhering to HACCP regulations
* Develop the kitchen chef team
* Ensure the smooth running of food services in the absence of the head chef

Requirements
A minimum of three years' experience as a chef and previous experience as a sous chef is required. The ideal candidate will have a passion for food presentation and be able to develop and lead a kitchen team.
