Overall Purpose of the Job
The successful candidate will be responsible for coordinating the day-to-day operation on the ground, managing the maintenance, caretaking, cleaning, and catering departments.
Main Duties and Responsibilities
o To manage the supervision and control of all food and beverage from the Kitchen, ensuring high-quality food is provided in all areas while controlling GP% and Costings.
o To ensure that the service of all meals meets the standards laid down by the Company.
Client’s Specification
o To obtain supplies and purchases from Company-appointed suppliers or site-specific.
o To ensure that the control of raw materials and portions meets the Company’s standards.
o To prepare all food using fresh and local produce while maintaining high standards of quality and presentation.
o To comply with standards and Client specifications in food preparation, production, and presentation.
o To complete and maintain all legislative paperwork as required by law, including the Bilfinger Kitchen Diary.
o To maintain Company hygiene and safety standards and take necessary actions as required.
o To develop and update cleaning schedules as necessary.
o To ensure the security of the kitchen, stores, and any other areas.
o To ensure that all areas under the Chef’s control are clean and tidy at all times, with all equipment switched off at the end of each shift.
o To maintain satisfactory relationships at all appropriate levels of the Client organization.
o To attend to all customer complaints and compliments within the guidelines and timeframes set by the contract and Account Director.
o To ensure admin procedures are handled in conjunction with the Line Manager.
o To conduct regular security checks.
o To ensure all deliveries are received and recorded as per company requirements.
o To ensure all new staff are inducted into the Canteen and kitchen procedures.
o To maintain tight stock control on ALL produce through bookwork, wastage, and weekly stock takes.
o To design and roll out a recipe database for core items and menus.
o To review and update the current hospitality menus and offers.
o To deliver weekly menu planning and engineering set in a monthly cycle.
o To attend to any necessary actions in the event of accidents, fire, theft, lost property, damage, unfit food, or other irregularities.
o To attend meetings, conferences, and training courses as requested.
o To attend to any other reasonable request made by management.

Qualifications and Experience
o Previous experience within a working kitchen.
o Knowledge of Kitchen Health & Safety Procedures and all Legislative Requirements.
o Experience in Costing and Menu Planning.
o Knowledge of Stock Control.
o Experience in High-Quality Food Production.
o Recognized Professional Culinary Qualification.
o Excellent communication skills.
o Ability to make on-the-spot decisions.
o Knowledge of audit requirements.
o Excellent customer service skills.
o Must possess organizational skills.
o Excellent people management and communication skills.
o Must be self-motivated and able to motivate others.
Working Pattern:
Full-time, Monday to Friday from 7:00-15:00.
