Restaurant Manager - Cullen's at the Cottage
We are currently looking for a Restaurant Manager for Cullen's at the Cottage to join the team at The Lodge at Ashford Castle.

Key Responsibilities Of The Restaurant Manager Will Include:
1. Manage Food & Beverage Standards within the Restaurant, ensuring they meet the required Hotel/RCH Service Standards.
2. Monitor daily operations within the Restaurant, liaising closely with the Food & Beverage Manager and the Executive Head Chef.
3. Be fully aware of Hotel Function Sheets and Restaurant Bookings, ensuring sufficient equipment, resources, and staffing levels.
4. Be fully aware of the menus, seasonality of products, and the story of menu items.
5. Work in conjunction with the Food & Beverage Manager to ensure effective purchasing and cost controls are in place.
6. Manage the service and ensure all team members are carrying out the standards.
7. Be actively involved in all aspects of daily operations in a 'hands on' capacity.
The Ideal Candidate For The Restaurant Manager Position Should:
1. Have successfully graduated with a Hospitality related degree.
2. Have previous solid experience in the Management of a similar F&B function, preferably in a 5-star hotel.
3. Possess a strong knowledge and passion for Food & Beverage.
4. Have good ability to manage all cost controls e.g. food cost, labour.
5. Have experience in staff training, rotas, financial reporting, stock control, and ordering.
6. Exhibit excellent communication and team leadership skills.
7. Demonstrate excellent organisational skills.
8. Have the ability to handle pressurised situations and busy periods.
9. Be knowledgeable on Leading Hotels of the World and Forbes 5 Star standards.
10. Certification on Wine Spirit and Education Trust (WSET) is a plus.
11. Be flexible, innovative, and adaptable.
12. Be fluent in both written and spoken English.
