Talbot Hotel Clonmel is currently recruiting for a Junior Sous Chef.
Main Duties:
* Supervise kitchen staff in the absence of the Head Chef or Sous Chef.
* Presentation of food for designated areas.
* Assist with HACCP controls as required under legislation and ensure all relevant paperwork is completed.
* Maintain high standards of cookery as laid down by the company.
* Train, develop, and motivate the kitchen team.
* Create SOPs for the department.
* Assist with menu reviews and costing.
* Develop and coach kitchen staff to meet kitchen standards.
* Delegate tasks to maximize resources.
* Liaise with suppliers and sales representatives.
* Awareness of hotel business across all departments.
* Manage supply ordering.
* Ensure health and safety standards are maintained.
The successful candidate must have:
* Previous experience in a similar position, preferably in a 4* hotel environment.
* HACCP training and a focus on hygiene.
* Professional appearance and a positive work attitude.
* Ability to work as part of a team in a busy kitchen environment.
Be flexible and available to work varying shifts, 5 out of 7 days, including weekends.
