About the Company - The 5* College Green Hotel Dublin (part of the MHL Hotel Collection) is currently recruiting for a Sous Chef for its kitchen team. This is a rare opportunity to join this high-profile hotel and lead the culinary management of the Morelands Grill Restaurant.
About the Role
* This role manages the delivery of a 5* culinary service in a busy city centre hotel across several restaurants and key hotel departments, reporting directly to the Executive Head Chef.
* The Sous Chef will manage all chefs and kitchen staff in the areas of development, productivity and in rostering and delegation of responsibilities.
* The incoming chef will introduce new methods of maintaining standards and keep the College Green Hotel Dublin at the forefront of high quality dining in Dublin.
* You will be responsible for seasonal menu development and introduction of improving kitchen standards.
* Other areas of responsibility are HACCP management and representing the department at management meetings.
Ideal candidate will possess:
* Exceptionally high standards with relevant experience in preferably a 5* Hotel.
* Role would suit a proactive, quick-thinking team-player who enjoys dealing with situations and requests in a fast-paced environment.
* Grill experience essential.
* An interest in high quality food delivery.
* An ability to identify areas for improvement in operations, costings and internal development.
* All candidates must have the relevant work eligibility documentation upon offer stage.
