The Hodson Bay Hotel has a fantastic opening for a Assistant Food & Beverage Manager to join the team and assist in the Food & Beverage operations.
Our outlets include the Waterfront Bar & Brasserie which has seen extensive investment in facilities and new exciting menus. Our L'Escale Restaurant offers guests a fine dining experience with creative culinary delights from our Executive Head Chef and his team. The hotel also has an outdoor dining experience '52 @ The Bay' which offers culinary experiences with lake views.

Responsible to: General Manager/ Food & Beverage Manager
Job Purpose:
To assist in ensuring the smooth and efficient running of the food & beverage operations and to promote a positive image to both customer and colleagues in relation to service and quality of food and beverages.
Main Responsibilities:
* Assist in the day-to-day running of the Food & Beverage Outlets.
* Take control and responsibility for the Waterfront Bar & Brasserie, L'Escale Restaurant, 52 @ The Bay, and Room Service.
* Maximize revenue opportunities.
* Lead a team of Managers, Assistant Managers, Food & Beverage Supervisors, and Food & Beverage Assistants to ensure the highest levels of Customer Care are practiced at all times.
* Assist and carry out training as required and document the same.
* Handle day-to-day queries, complaints, and issues that arise in the Bar, Brasserie & Restaurant.
* Ensure cash/vouchers and all forms of payment are handled securely.
* Deal with complaints in a courteous and efficient manner and inform the senior manager.
* Attend weekly Heads of Department meetings in absence of Food & Beverage Manager.
* Assist with recruitment and selection for Food & Beverage outlets.
* Support the F&B Manager and Departmental Managers with Performance Management.
* Assist in the management of Weekly Rosters.
* Maintain and audit hygiene levels.
* Maintain and audit food quality levels with Executive Head Chef and Food & Beverage Manager.
* Ensure reasonable care is taken for the Health and Safety of yourself, other employees, guests, and any other persons on the Hotel premises.
* Report and take action on incidents of accidents, fire, loss, or damage.
* Carry out all Managerial duties as per the agreed standards.
Your normal working week will be 5 days over a 7-day roster, including weekend work.
Requirements:
* A minimum of 2 years experience at Manager level in a 4* Hotel.
* Possess strong leadership qualities.
* Ability to train new & existing staff.
* Excellent knowledge of Food and Beverage & a strong eye for detail.
* Ability to perform under pressure.
* Availability to work 5 over 7 days for both opening and closing shifts.
* A strong level of HACCP.
* Knowledge of budgeting and rostering.
