Job Objectives
1. Overseeing the kitchen in the absence of the Sous Chef.
2. Ensuring high culinary standards are met.
3. Keeping the kitchen environment safe and hygienic.
4. Contributing to menu development sessions with the senior culinary team.
5. Overseeing the safe storage of food.
6. Preparing both raw and cooked food.
7. Cooking food to a high standard.
8. Portioning and packing both raw and cooked food.
9. Rotating and allocating foodstuffs.
10. Regenerating and servicing food.
11. Labeling, chilling, and storing food.
12. Keeping accurate records and operating necessary computer systems.
13. Maintaining the cleanliness and good order of area of assignment and associated areas to the highest possible standard in line with Nua policy.
14. Efficiently and economically using materials and equipment.
15. Assisting with special functions as required.
16. Providing assistance and advice to staff in packing/plating areas on portion size.
17. Checking for meals at all service points throughout the LSU for quality, quantity, and presentation.
18. Cash handling/reconciliation, where appropriate.
19. Stock-taking at relevant intervals.
20. Checking the quality of goods received as per specification.
21. Reporting and documenting any supplier non-conformance issues.
22. Providing cover for existing Chef as appropriate.
23. Participating and contributing to food surveys and feedback mechanisms within the service.
24. Coaching and mentoring junior catering staff.
25. Attending monthly HACCP meetings and assisting in any action plans discussed.
26. Any other duties relevant to the post as may be allocated by the Line Manager.

Skills Required
Qualification:
Hold a Professional Cookery award at minimum Level 6 on National Framework of Qualifications (NFQ) or equivalent maintained by the Quality and Qualifications Ireland (QQI), or have obtained an equivalent qualification from another jurisdiction.
