Objective of the Role
The Breakfast Chef assists the Head and Senior Chefs in the daily operation of both Re:Fuel and Tenters Kitchens. The Breakfast Chef works alongside both Kitchen and Food & Beverage Associates to create memorable and consistent dining experiences for hotel guests and visitors.
The Breakfast Chef has direct influence and accountability for the productivity, quality standards, Aloft culture, and guest experience of the department. The Breakfast Chef is a member of the Aloft Vibe across the Kitchen Team in the Hotel and is committed to guest satisfaction and providing an Aloft-style experience every time. This person has an eye for detail and never fails to strive for perfection, with a winning spirit to deliver an on-brand experience, always.
Job Requirements:
1. Starting time is 05:00 already in the kitchen in uniform.
2. Job includes working weekends and bank holidays.
3. Creativity for rotation of dishes beneficial.
4. Assist with the Kitchen operation, taking direction from the Head and Senior Chefs in order to be trained in each section of the Kitchen.
5. Maintain a detailed knowledge of the full menu and be able to explain dish descriptions.
6. Prepares all mis-en-place as required per standards for the respective production section.
7. Assist Chefs with menu preparation, preparing and cooking all food orders with a sense of urgency.
8. Be familiar with the other kitchen sections, promoting flexibility and productivity.
9. Liaise with Kitchen Associates regarding the availability of menu items, additions to the menu and any relevant changes.
10. Maintain excellent presentation standards and cost control for all Food & Beverage outlets.
11. Prepare and present menu items showing variety and flair, within the cost margins specified by the Hotel.
12. Ensure strict stock rotation and minimum wastage. Have stock control procedures implemented and maintained.
13. Keep all working areas clean and tidy.
14. Actively participate and manage Marriott’s food safety program.
15. Ensure all equipment is maintained, serviced and cleaned.
16. Report any problems to the Head Chef.
17. Adhere to Emergency Communication procedures ensuring that enquiries from the media are only responded to by the nominated spokesperson.
18. Effectively implement and support all Marriott-related programs.
19. Strive to implement the Aloft & Marriott Vision and demonstrate active use of the Core Values.
The ideal Breakfast Chef will have:
1. Minimum of 1-year's experience as a Breakfast Chef in a hotel setting is Essential.
2. Professional demeanour and high grooming standards.
3. Ability to thrive in a busy environment, starting work from 5 am.
