We are currently recruiting a Sous Chef to join our culinary team at Carton House.
Key Responsibilities:
1. Assist in the design and delivery of new menu concepts.
2. Manage and oversee the smooth running of the day-to-day operation in the kitchen in conjunction with the Senior Chefs.
3. Maintain consistently high standards and quality across all areas of the food operation.
4. Be involved in the training and coaching of team members.
5. Monitor team efficiencies and review on a regular basis.
6. Maintain purchasing, receiving and food storage policies and procedures.
7. Understand the agreed targets on food cost, payroll and wastage as per departmental budgets.
The successful candidate will:
1. Have a minimum of 2 years' experience in a similar senior role within a 4-5 star property.
2. Possess a creative flair and passion for cooking with local, fresh, seasonal and quality ingredients.
3. Exhibit strong team leadership and organisational skills.
4. Hold a HACCP Qualification.
5. Demonstrate a 'can do' attitude towards training, developing and motivating the culinary team.
6. Show excellent attention to detail and consistency in producing high standards of food at all times.
7. Be courteous and focused on providing a consistently high standard of customer service.
8. Have the ability to multi-task in a fast-paced environment.
9. Possess a good command of the English language.
