After all this time, the ethos of Avoca remains the same. We cherish our time-honoured traditions, which have been lovingly passed down through several generations. Today, there are third generation weavers working at the Mill. Our skills might be steeped in a long and rich tradition, but our attitude is to look to the future. Now heralded as one of Ireland's most exciting retail stores, there are Avoca ceramics, clothing, perfumes, soaps and more from our own design studio. We have a host of award-winning cafes and restaurants, Food Markets crammed with artisanal ingredients from near and far, as well as a best-selling range of Avoca cookbooks. There are also gardens to explore at many of our stores, as well as florists and garden centres. The list goes on. And all of this from a modest hand weaving mill, established in a rural Irish village in 1723.
We are currently looking for an experienced Sous Chef to join our Avoca Suffolk Street location.
The Sous Chef will assist the Head Chef in proactively managing Kitchen operations, ensuring consistent high levels of friendly and professional service, and responding promptly to individual guests' and business needs and requests for all food outlets. The ability to lead a large team, cope well under pressure, and demonstrate a passion for quality along with good communication and organization skills are very important for this role.
The ideal candidate will:
* Have previous notable experience working in a busy restaurant environment

Roles and Responsibilities:
* HACCP - Ensure food systems management is up to date and compliant with HACCP and EHO guidelines. Regularly practice stock rotation (FIFO - First in, First out) and stay updated with HACCP training.
* Food Preparation - Undertake daily and weekly food preparation to ensure high standards and sufficient preparation for the following day or week.
* Kitchen Setup/End of Day Duties - Ensure all counters and surfaces are clean, along with storage shelves and storage fridges.
* Food Storage - Store food in appropriate, clean, dry containers, clearly labelled with production and use-by dates.
* Food Presentation - Ensure that all food/dishes are presentable in keeping with Avoca standards or as directed by your line manager/Head Chef.
* Cleanliness/Organisation - Maintain cleanliness in daily duties and organization skills to ensure proper food storage, rotation, and adherence to health and safety regulations.
* Timekeeping - Adhere to sick leave and absence policies, using correct notification methods to a direct supervisor. Pre-approve holidays before booking.
* Multi-tasking - Focus on multiple tasks simultaneously, such as monitoring food items in the oven while preparing another dish.
* Flexibility - Adapt to customer service needs, including roster changes and covering short-staffed days in different kitchen areas, with prior notification whenever possible.
