Responsibilities:
* To liaise with all HOD's on a daily basis to ensure sufficient staffing levels.
* To manage all bookings.
* To supervise Collins bar and day-to-day operations within budgeted guidelines and to the highest standards.
* Preserve excellent levels of internal and external customer service.
* Identify customer's needs and respond proactively to all of their concerns.
* Lead F&B team by attracting, recruiting, training and appraising talented personnel.
* Establish schedules, policies and procedures.
* Provide a two-way communication and nurture an ownership environment with emphasis on motivation and teamwork.
* To assist in the daily operation of Food & Beverage department.
* To be operationally responsible for the service delivery and standards throughout the F&B department building when on duty.
* To ensure that the highest level of cleanliness is upheld in all areas of responsibility.
* Be highly visible and interface with customers on a regular basis to obtain feedback on quality of product, service levels and overall satisfaction, effectively responding to guest problems and complaints.
* To be operationally responsible for the service delivery and standards throughout the bar when on duty.
* Ensure that the back of house areas are in clean and proper condition.
* To handle all complaints in a calm, organized and discreet manner ensuring complete service recovery every time.
* To get involved in and carry out training in the hotel.
