Senior Kitchen Manager
Summary
We are seeking a highly skilled and experienced Senior Kitchen Manager to assume complete responsibility for the overall kitchen operation in the absence of the Head Chef. The successful candidate will support the Head Chef in managing the kitchen efficiently and ensure that all food safety and hygiene regulations are maintained.
Key Responsibilities
* Manage day-to-day kitchen operations, ensuring high standards are met at all times, in compliance with client contracts.
* Fully familiarise yourself with company policies and procedures, guaranteeing daily implementation of Food Safety and Hygiene regulations, as per current legislation.
* Assist in crafting menu cycles, promoting innovation and food variety while maintaining budgeted gross profit margins.
* Maintain the highest standard of food quality, presentation, and service throughout the kitchen.
* Aid in food ordering, using only approved suppliers to exploit broker supplier costs effectively.
* Share responsibility with the Head Chef for verifying food deliveries, ensuring only high-quality produce is accepted into the unit.
* Ensure the unit adheres to relevant legislation, including Food Hygiene Regulations Act 1950 and 1971.
* Confirm H.A.C.C.P procedures are implemented and maintain records and food safety checks within the kitchen.
* Assist with stock-takes as necessary.
* Evaluate training needs for all kitchen staff, under the guidance of the Head Chef.
* Contribute to cleaning and hygiene duties, ensuring assigned tasks are completed to standard.
* Review the kitchen hazard list weekly with the Head Chef.
* Maintain good communication and working relationships with clients, customers, and staff.
* Enforce the Company Dress Code rigorously among all staff.
* Perform any reasonable task assisting with service, food preparation, hygiene, safety, and other matters related to efficient unit operation.
Requirements
* Ability to lead kitchen operations in the Head Chef's absence.
* Strong leadership skills, with experience in managing multiple tasks.
* Excellent communication and interpersonal skills, with the ability to deal with staff and customers at all levels.
* Strong problem-solving skills, with the ability to follow instructions accurately and issue clear written or oral instructions.
* NVQ Level 1, 2 & 3 or equivalent qualifications.
* Basic Food Hygiene certification.
* 1-2 years' experience in a professional kitchen or productive catering environment.
* Experience in purchasing and profit optimisation.
* Industrial catering experience.
* H.A.C.C.P documentation experience.
* Menu planning experience.
* Dedication, self-motivation, and a flexible approach to hours and duties.
* Courteous manner and willingness to undergo training as needed.
