Job Title: Sous Chef
GREAT NATIONAL BALLYKISTEEN GOLF HOTEL is seeking an experienced and skilled Sous Chef to join our culinary team.

Key Responsibilities:
* Support the Head Chef in managing the smooth operation of the kitchen, ensuring efficient use of resources and adherence to health and safety regulations.
* Maintain positive relationships with kitchen and dining room staff, fostering a collaborative and respectful work environment.
* In the absence of the Head Chef, take responsibility for overseeing the entire kitchen operation, making key decisions to ensure seamless service.
* Prepare, present, and serve food to the highest standards, utilising available resources effectively and efficiently.
* Contribute to menu planning and preparation, suggesting new ideas and innovations to enhance our culinary offerings.
* Stay up-to-date with hotel business and plan accordingly to meet guest expectations.
* Ensure compliance with HACCP regulations, implementing stipulations and monitoring kitchen activities to maintain a safe and healthy environment.
* Maintain accurate cleaning schedules and temperature checklists, adhering to hotel policies and procedures.
* Respond effectively to guest complaints, resolving issues promptly and professionally.
* Collaborate with the Head Chef to achieve agreed food percentages, controlling purchasing, portion sizes, and food production and wastage.
* Purchase food items via Procure Wizard, ensuring accuracy and efficiency.
* Attend Head of Department meetings in the absence of the Head Chef, representing the kitchen team's interests.
* Participate in stock takes and training sessions, sharing knowledge and expertise with colleagues.
* Familiarise yourself with hotel policies and procedures regarding Health & Safety and Fire Regulations, contributing to a safe working environment.
* Develop and implement training programs for new staff, promoting their growth and success within the team.
* Take an active role in formulating new menus, leveraging your creativity and culinary expertise.
* Ensure all deliveries are stored correctly, cross-checked with purchase orders, and accurately weighed.
Requirements:
* A degree or diploma in culinary arts or a related field is preferred, although practical experience and on-the-job training may be considered.
* Previous experience as a Chef de Partie or similar role is essential for this position.
* Demonstrate a strong work ethic, taking initiative and being proactive in the kitchen.
* Possess excellent cooking skills, knowledge of various techniques, and the ability to handle multiple tasks efficiently in a fast-paced environment.
* Show exceptional English communication skills, both written and verbal, and a personable demeanor with professional presentation.
* Comprehensive knowledge of food safety and sanitation regulations to maintain a clean and safe kitchen environment.
* Ability to adapt to new environments, prioritise tasks, and work efficiently under pressure.
* Good time management skills to handle busy service periods and meet deadlines.
* Willingness to work irregular hours, including evenings, weekends, and holidays, as required by the restaurant's operations.
* Must have valid work permits to work in Ireland with no restrictions.
