We are currently inviting applications for a senior chef to lead the Kitchen Team at Nua Vista Restaurant The Ring of Kerry Golf Course.
ALL CANDIDATES MUST DEMONSTRATE PREVIOUS COOKING EXPERIENCE IN MEDITERRANEAN AND BRASSERIE STYLE CUISINE.
A qualified senior chef is required with a further 4+ year experience coming from hotel/ restaurant background necessary to lead the Nua Vista kitchen team. Your will be required to demonstrate your experience to date, your passion for food, your food knowledge and cooking skills. This is a great opportunity to grow & develop a career.
The objective of the role of Head Chef in the ROK kitchen is to consistently lead, manage and oversee the continued development in the following areas:
HACCP/Kitchen Hygiene /Uniform, and staff presentation.
Purchasing, food quality and the sourcing of local produces
Food production, quality, presentation and taste.
People management, development, and retention.
Food GP’s.
Labour Costs
Food Service.
Guest satisfaction – comment cards/trip advisor
Involvement in promotional events
This is a hands-on role, and you will be required to take full responsibility for the process, procedure, system and service control and the continuous quality improvement in food quality, menu type while maintaining the cost and expenditure budgets. You are responsible for ensuring the ROK kitchen is consistently fully compliant with Health and Safety and the HACCP regulations.
You are responsible for organising the efficient operation of all food in the ROK outlet and assist in the effective administration of the this outlet.
