We are seeking a highly motivated and experienced Sous Chef to join our team at Mikey Ryan's Bar & Kitchen, the casual dining experience at Cashel Palace Hotel. The successful candidate will have a passion for food that is treated as a rich celebration of life, of the land, of the locality.

Key Responsibilities
1. Leadership and Team Management: Lead and motivate a team of junior chefs, providing guidance and support to ensure seamless kitchen operations in the absence of the Head Chef.
2. Culinary Excellence: Develop and implement menus that showcase local ingredients and culinary expertise, maintaining high standards of quality and presentation.
3. Inventory Management: Effectively manage inventory, minimize waste, and optimize GP through efficient ordering and stock control processes.
4. Kitchen Operations: Oversee daily kitchen operations, ensuring timely preparation and service of meals, while maintaining a clean and safe working environment.
5. Industry Experience: A minimum of 2 years' experience in a similar role or a senior position in a 5-star hotel or Michelin-recommended restaurant.
