Main Purpose of Job:
To personally provide and supervise the service of food and beverages to our guests with accuracy and courtesy to the standard required according to legislation and the internal standards set out by Trump International Doonbeg.
Liaises with:
Culinary Department, Stewarding, Reservations
Main Duties
1. Arrive to work on time, appropriately groomed and in the correct uniform.
2. Support the Restaurant Manager in ensuring efficient, friendly and professional service within the Trumps Restaurant.
3. Train, supervise and monitor restaurant staff to ensure the efficient operation of the Restaurant.
4. Monitor daily operations and liaise closely with the Restaurant Manager and the Head Chef to ensure that the Trumps Restaurant is organised effectively to meet daily business needs.
5. Manage the Food & Beverage service in the absence of the Restaurant Manager, taking ownership of the operation to ensure that all guests receive an efficient, friendly and professional service at all times.
6. Be fully aware of guest bookings, ensuring there are sufficient resources and staffing levels to meet the business demands.
7. Assist the Restaurant Manager in implementing cost control and stock control measures.
8. Be actively involved in all aspects of daily operations in a ‘hands on’ capacity.
9. Supervise the service of food and beverages to our members and guests to a five-star standard and support staff in the serving of beverages, snacks and meals as necessary.
10. Maintain departmental standards and embrace improved processes ensuring staff are held accountable for performance - conduct retraining of standard operating procedures as necessary.
11. Communicate our services and facilities to guests as required.
12. Have a thorough knowledge and understanding of each menu item presented to our members and guests.
13. Ensure that the Restaurant is clean, well-maintained and attractively presented.
14. Assist in the service of outside catering and functions when required.
15. Solicit feedback from guests concerning food, beverages, service and improvement ideas.
16. Address any customer concerns in a professional manner and notify management of same.
17. Deliver careful monitoring ensuring that no person under the age of 18 is served alcoholic beverages and that tobacco legislation is adhered to.
18. Ensure that all guests' requests are responded to immediately.
19. Ensure that all standards and hotel cash handling procedures are met.
20. Ensure that all orders are entered into the company POS system.
21. Attend weekly meetings or briefings as required by Management.
22. Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel which can include day, evening or weekend shifts.
23. Participate in training programmes as required.

1. Previous Restaurant supervisory experience.
2. Knowledge & experience of five-star hospitality an advantage.
3. Good organisational and problem-solving skills.

6. Operates to a very high-quality standard.
7. Positive, can-do attitude.
8. Ability to work flexible hours.
9. Ability to remain calm whilst under pressure.
10. Additional languages an advantage.
