Eddie Rocket's is looking to hire experienced Assistant Head Chef for the following location: 9 Pearse St. Bellview, Mullingar Co. Westmeath. N91 YT32.
Permanent / full time / 39 hours weekly
Experience required: minimum 2 years experience in a similar role and HACCP level 2.
ACCOUNTABILITY: HEAD CHEF AND MANAGER
FULL TRAINING PROVIDED
OVERALL RESPONSIBILITIES:
* Proficiency at all levels in the kitchen, including recipe execution, food preparation specifications, and menu assembly specifications.
* Ensure all Standard Operating Procedures are upheld.
* Follow all opening and/or closing checklists.
* Keep lines of communication open between BOH and FOH, and communicate well with fellow kitchen employees and managers.
* Assist front-of-house employees with any reasonable request.
* Assist with other projects as assigned.
SPECIFIC RESPONSIBILITIES
OPERATIONS
* Food Quality:
* Ensure HACCP policy is adhered to at all times.
* Responsible for preparing food items as outlined in the Food Preparation Specification manual.
* Responsible for assembling food items accurately as outlined in the Menu Assembly Specifications manual.
* Clear understanding of all recipe items and ingredients.
* Maintain appropriate levels of Menu Assembly food items on cook line to meet unit requirements.
* Assist with proper rotation and storage of all products according to FIFO (First in, First Out) principles.
* Understand and control flow of food times throughout stations in the kitchen.
Safety, sanitation, and cleanliness:
* Ensure safety and cleaning practices are followed.
* Keep work station clean, organized, and sanitized throughout shift.
* Maintain BOH cleaning checklist and complete daily/weekly cleaning schedules.
Repairs and maintenance:
* Assist in maintaining the facility by reporting any repairs required to the manager/shift supervisor and/or head chef.
Training and development:
* Attend training both on and off the job as assigned by the company.
* Help develop BOH trainees through positive and constructive feedback.
Food Cost:
* Follow the procedure for daily product receiving, tracking waste and spoilage, daily production checklists, and portion control during food preparation and menu assembly.
Human Resource:
* Practice good daily personal hygiene. Wear clean, full, and correct uniform for each shift.
* Hold respect for others in all relationships with employees, suppliers, and Managers.
