Head Bar Associate
At The Dunloe Hotel & Gardens we are currently recruiting for a Head Bar Associate. Job Responsibilities:
Maintains inventory
Creates drink and food menus
Ensures bar is well-stocked and clean
Tracks customer behaviour and sales
Maintains budget and monitors costs
Maintains drink recipe documentation
Oversees planning for special events and weddings
Appropriately delegates tasks to staff
Selects and purchases liquor and other supplies in collaboration with Stores Manager and General Manager
Oversees bar staff, including recruitment, training, performance management, scheduling and payroll
Initiates and maintains vendor relationships
Contributing to the day-to-day tasks of The Bar in collaboration with bar staff on a daily basis:
Promoting and the selling of drinks and food from The Bar and The Grill Restaurant
Meeting and greeting of guests in a warm and friendly manner
Recording guest orders in a prompt and professional manner with care and attention
Tracking customer orders in the electronic point-of-sale system
Preparing and serving drinks and cocktails
Provide a five-star experience for The Dunloe guests
Ensure that the working area/station is kept clean and efficiently stocked at all times
Preparing receipts for guests and cash handling using the electronic point-of-sale system
Keep point-of-sale tracking technology and bar and restaurant management platforms up to date
Boasting a professional and courteous attitude and complying with Killarney Hotels Collection policies and procedures
Have a full knowledge of alcohol and liquor policies and regulations
Ability to multitask and work well under pressure
Create a relaxed atmosphere that our customer has come to expect, while maintaining standards set by The Dunloe Hotel and Gardens
Qualifications/Skills:
Previous experience in a bar supervisory or management role essential
Degree or higher in hotel and restaurant management and mixology preferable
Accomplished mixologist, with the ability to teach new employees mixology skills
Excellent ability to multitask
Problem-solving skills
Interpersonal relationship skills
Attention to detail
Strong leadership ability
Impeccable, professional personal presentation required at all times
Organizational skills
Customer service skills
Knowledge of food, beverage, and hospitality industries

Fluency of the English language, both verbal and written, is essential
In-depth knowledge of fine wines, whiskey’s, liquors and craft beers
